When I woke up today, I felt light and easy.

There's an air of positivism around me and I feel very energized after completing 8 hours of sleep.

The forces of joy and love in the universe seem gathered its voices in greeting me good morning!

What a pleasant morning it has been.


When I say a little pray of gratitude I heard God saying, "I blessed you with satisfaction and contentment and it's now in your hands to design this day".

I smiled and choose to be happy today.

And to switch the real and earthy happiness on, I decided to fix a cup of  brewed coffee to start this day.

Opening the pantry, the neglected Starbucks' House Blend made me sing....hallelujah! 

This is my beginning, I decided.

Royal Dansk, a Danish butter cookies is expiring soon so, I convinced myself that it should be the perfect match to my coffee . Yes, for breakfast, lol!

To my surprise, the coffee and butter cookies was a perfect combination. :-) The extra sweetness from the butter cookies is a true reflection of me to the delicious cup of coffee.

ANGEL FOOD CAKE TIRAMISU

Angel Food Cake:
½ cup + 1 tablespoonMAYA Cake Flour, sifted
1/8 teaspoonSalt
¼ cupSugar
½ +1/3 cupegg whites
½ teaspooncream of tartar
1 teaspoonvanilla extract
¼ cupSugar

Coffee Syrup:
½ - 1 tablespooninstant coffee powder
2 tablespoonsSugar
½ cuphot water
2 tablespoonscoffee liqueur 

Cream Topping:
1 barcream cheese
¼ cupSugar
2 tablespoonsconfectioners’ sugar
2 tablespoonslow-fat milk
2 tablespoonsplain yogurt
1 piece vanilla bean pod
½ cupwhipping cream

2 tablespoonscocoa powder, for garnish

Prepare angel food cake. Preheat oven to 350ᵒF/177ᵒC. Line the bottom of an 8-inch square pan. Set aside. Sift flour, salt and ¼ cup of sugar 4 times. Set aside. Beat egg whites with cream of tartar until soft peaks form. Add vanilla extract and remaining sugar gradually and continue beating until stiff. Fold in flour mixture gently; blend well. Pour into the prepared pan and smoothen the top. Bake in the oven for 20 minutes or until done. Loosen the sides by using a spatula or dinner knife and invert cake on a wire rack to cool for about an hour.

Prepare coffee syrup. Dissolve coffee powder and sugar in hot water. Add coffee liqueur and stir well.

Prepare cream topping. Beat cream cheese, sugar and confectioners’ sugar until the sugars are dissolved. Beat in milk and yogurt. Split the vanilla bean pod lengthwise and scrape the seeds; beat in the mixture. Set aside. Whip the cream until double in size. Fold whipped cream into the cream cheese mixture. Transfer to a piping bag with a round piping tip.
To assemble. Transfer cake to a plate. Brush with coffee syrup until well-soaked. Pipe cream on top of the cake. Dust with cocoa powder on top.

Yield: 8 servings




CHOCOLATE HEART FUDGE BROWNIES

1 pack                                 MAYA Chocolate Fudge Brownie Mix 500g
½ cup                                  butter, softened
2                                           eggs
1 tablespoon                      water
½ cup                                  chopped cashew nuts

                                                dark chocolate, melted, as needed
                                                chocolate heart cut-outs, as needed
                                                whipped cream (optional)

Preheat oven to 325°F/163°C. Grease and line the bottom of an 8-inch square pan. Set aside. In a bowl, stir brownie mix, butter, water, eggs and nuts (set some aside for topping) until well blended. Spread in prepared pan and top with reserved nuts. Bake for 30-35 minutes. Cool completely before cutting. Drizzle or spread melted chocolate on top of brownies and decorate as desired.

Yield: 4 servings (4 x 4” squares)

CHOCOLATE MERINGUE KISSES

1 tablespoonMAYA Cornstarch
6 tablespoonsSugar
2 egg whites
1/8 teaspooncream of tartar
pinchSalt
½ teaspoonvanilla extract
1 tablespooncocoa powder

Dark chocolate, melted, as needed

Preheat oven to 300ᵒF/149ᵒC. Line one cookie sheet with baking paper and set aside. In a bowl, combine cornstarch and sugar. Mix well then set aside.

Using a stand mixer on high speed with whisk attachment, beat the egg whites, cream of tartar, salt and vanilla extract until soft peaks form. Reduce speed to low and gradually add the cornstarch and sugar mixture. Return to high speed and beat until stiff peaks form. Fold in the cocoa powder. Transfer mixture to a piping bag with a star tip. Pipe meringue kisses on the cookie sheet and bake for 40 minutes. Turn the oven off and leave the tray inside the oven for one hour. Let the meringue kisses cool at room temperature for at least 10 minutes. Once cooled, dip half in melted chocolate. Let the chocolate-dipped meringue kisses set on a lined cookie sheet and transfer to an airtight container.

Yield: 15-20 pieces

Catching Up with Rome

The moment I’m about to close this blog has come but I decided to come back instead. Considering the huge memories I wrote on this cyberspace, I have to believe that someone is reading this blog and patiently waiting for my return, lol!




So, what’s up with me after almost a year of hiatus? 

I been busy tossing my life between cooking, travelling and half of it was spent in the corporate world. My corporate world was kinda boring so I’ll skip that part.

Food and Cooking


Most of my time was spent in the kitchen. You see, on my food blog, my skills in the kitchen had leveled-up, I’m proud and claiming it as my biggest achievement for the past year. Preparing up food is really never boring. I had fun styling, designing and taking pictures of different food I made in my kitchen but hate preparing it. Travel

I may have neglected to update my travel website regularly but there are some interesting stories to read on. And I promised to accelerate my posting this year. To tell you honestly, I have 2 years of travel backlogs that I need to post and only if I could buy time literally, I would.

EL NIDO ISLAND HOPPING | TOUR A - BIG LAGOON



Municipality of El Nido, Palawan, Philippines - where every island has its own distinct identity, has more than 50 islands to discover. Enchanting lagoons, few small atolls and beaches spread around Bacuit Bay - mostly occupied by expensive, luxury hotels - so instead of trying to choose one, Trixie and Rome decided to hop an island to another.

Unless you were booked to one of the luxurious El Nido Resorts who are hopping the islands on seaplanes and speedboats, island hopping conjures up images of packing onto steamy, diesel-smelling ferries between El Nido Islands.




Just few minutes from Simizu Island where they had a bountiful lunch, their group arrived at the narrow entrance of the famous El Nido trademark, Big Lagoon. 

There’s a long queue of boats coming in and out the lagoon so they have to wait in awe.

Their group was composed of different nationalities - there are Dutch, Portuguese, and some Koreans. While waiting, Rome can’t help but observe the reaction and tone of voice of the foreign nationals as they express their admiration in their language. “If only I could find translations services to translate what they are saying right now, I’ll be more than delighted”, he said smiling, very proud of his place.




From afar, Rome was still mesmerized by the rugged limestone formations and landscape colored by the magnificent clarity and shades of blue seascape as if he’s new to the place. "Ahhh, my soul has been cleaned, this is really relaxing!", he said to himself.




He chatted with the boatmen to fill the dead air between, "If the tide is not high enough, the tour boat could experience difficulty going into the lagoon. Some tourists were asked to get off their boats, walking on corals and damaging the environment" :-( The boatman explained with a sad tone of voice.




Their boatmen, however, were good in navigating the shallow part, it was a smooth cruising into the Big Lagoon. 

Touring the lagoon is the highlight of tour A. Bring a kayak with you when going to great Big Lagoon, it is highly recommended so you can take a kayak ride, paddle around the lagoon and you'll be moving around in your own time.




The view of karst rocks and blue water as they entered was a natural wonder and absolutely incredible. The amazing beauty of Big Lagoon differs from small lagoon. Small lagoon was intimate while big lagoon has a wide open views.  




As they approached the middle of the lagoon, the color of water changed from turquoise to dark blue. "It is probably deep", said Trixie.

The lagoon is wide and is home to small sharks, sea urchins, stingrays, jelly fish and some less friendlier marine animals so swimming around in the deep water might not be such a good idea. Their boat just go around the place slowly.




Every inch, this place is picturesque where movies and promotional videos are shot. Don't forget to bring your camera and just capture lots of still memories of the most beautiful place you will ever be in your life.
